Best Banana Coconut Bread Recipe

This banana coconut bread is insanely delicious and super nutritious with no refined sugars AND it’s gluten free!!

I’ve been playing around with this recipe and am now excited to share it with you all.

The health benefits of bananas, packed with potassium and magnesium combined with dates, rich in antioxidants make this bread super healthy and tastes amazing!


Ingredients: 

8 dates seeded and chopped

3 bananas mashed

4 eggs

1tsp vanilla

1tbsp chia seeds

1tsp cinnamon

½ tsp nutmeg

1 tbsp linseed meal (can use coconut flour if you wish)

½ cup coconut oil, melted

1tsp bicarb soda

1 cup shredded or dessicated coconut (can use a little less if you wish)

¾ cup almond meal

¼ cup gluten free plain flour

 *If you wish, you may use 1 cup of almond meal and delete the gluten free flour all together. It makes the loaf a bit heavier in texture but still delicious.

*Please also feel free to add  walnuts to the bread for additional taste and texture.


Method:

  1. Preheat oven to 180C

  2. Mix melted coconut oil with vanilla, eggs, bananas, dates and bicarb. *Then add coconut, chia seeds, linseed meal, almond meal and GF flour. *Place the mixture in a lined loaf tin and bake for about 50 minutes . *Test the middle with a skewer to see if it comes out clean before removing from the oven.

  3. Let loaf sit in the tin for 10 minutes before removing and cooling on a wire rack


Enjoy either warm or cold. It is delicious spread with organic butter!!
